Breakfast Pizza

Ingredients 

1 lb of chorizo

3-4 slices of bacon

1/4 cup of chopped green onions

2 large handfuls of baby spinach

8 eggs

Method: 

1. Cook bacon in pan set aside. Preheat oven to 350

2. Add sliced or ground chorizo

3. Brown sausage and add green onions

4. Throw in spinach and let it cook down

5. Add eggs to pan and transfer into oven until eggs solidify

The chorizo onion and spinach combine to form a meatza-like crust.

*I bought my chorizo from Olde World Farms and it is delicious!

Bacon Wrapped Dates

Ingredients

  • 1 bag of pitted dates
  • 1 package of bacon

Method

  1. Take the slices of bacon and cut them in half (if your slices are pretty thick, try cutting the in three pieces).
  2. Wrap the bacon around the pitted date at least once and put a toothpick through to hold it in place
  3. Place all wrapped dates onto a pan or in a dish.
  4. Broil the dates for about 7-8 minutes and then flip them over and repeat.
*Make sure you wet the toothpicks before you use so they do not burn when you broil them.
*Buy high quality nitrate, nitrite free bacon without any other preservatives and additives.

Bacon Wrapped Turkey

Directions
1. Remove gizzards; rinse; pat dry
2. Season the turkey with kosher salt and pepper or cajun spices if you are feeling frisky
3. Cover generously with olive oil
4. Completely wrap the turkey with strips of bacon
5. Pre-heat the oven to 500 and cook turkey for 20-30 minutes or until bacon starts to crisp
6. With the oven door closed, reduce the temperature to 325-350 for the remaining cooking time.
The bacon fat will naturally “baste” the turkey as it cooks, so there’s no need to do so with the cooking juices.

 

*Cook until the internal temperature reaches 165 degrees. Use this chart as a guide

Supplements

I don’t typical recommend supplements because I feel you should often get the bulk of your vitamins and minerals from whole food sources. Because we all don’t eat organ meats, wild fish and get plenty of sunlight here are some supplements I’ve taken or currently take.

Natural Calm - 1 teaspoon every night

Cod Liver Oil - 2 1000 mg caps in morning and at night

Vitamin D3 - 4000 IUs daily (more in the winter months)

Emergen-c – 3 – 4 times a week

Blue Ice Royal Butter Oil/Fermented Cod Liver Oil - 2 caps in the morning and night (currently out). Prefer this over regular cod liver oil.

Seared Duck Breast

Ingredients:
1. Duck Breast (1) (Recently available from meat counter at Whole Foods, Available pre-packaged at Central Market)
2. Sweet Potato (1)
3. Spinach (2 handfuls)
4. Butter (1 tbs) – maybe
Seasoning:
1. Garlic Cloves (1/2- minced)
2. Salt (to season)
3. Pepper (to season)
4. Cumin (1/2 tablespoon)
Directions:
SWEET POTATO: (Note: Duck and Spinach takes ~20 min total. Prepare sweet potato to be ready to serve with duck)
1. Puree sweet potato with salt, pepper, 1 tbs butter, and cumin.
DUCK and SPINACH:
If you’ve never cooked duck….Youtube link for steps 1-5 here
1. Score skin on duck breast in a diamond pattern. Season both sides of duck breast with salt and pepper.
2. Place duck skin side down on a cold skillet.
*Note: Duck skin is full of delicious fat…one of the most flavorful fats next to bacon.  By starting in a cold pan, the fat will release from the skin.  No additional fat is needed for cooking.
3. Turn burner to medium-medium-high
4. Once the duck breast begins to sizzle cook for 5-6 minutes until the skin is nice and crispy. Flip over and cook for additional 1-2 min.
*Note: Duck is a poultry that is normally served medium-rare. If you like your meat a little more well done, adjust cooking time accordingly.
5. Remove duck breast from pan and allow to rest ~3 minutes before slicing.
6. Save leftover duck fat!
7. Add garlic to some of that duck fat. Saute garlic 1-2 minutes.  Add spinach. Saute spinach another 1-2 min.
